Role summary

We are hiring a Manager for Premium F&B Operations Catering, responsible for managing the event-related catering program for Premium F&B outlets, catering events, and team catering for sports teams. This role ensures an exceptional guest experience by driving team performance, achieving business results, and fostering team engagement and development. Key responsibilities include setting direction for staff, overseeing event operations, tracking sales trends, managing inventory and costs, coordinating labor, working directly with clients, collaborating with the Culinary Department, and managing payroll. The manager will also participate in the full-cycle recruitment and development of staff, conduct team meetings, and uphold company objectives and a positive attitude. A minimum of 5-7 years of Food & Beverage management experience, including fine dining and catering in an entertainment venue or hotel, is required, along with proficiency in POS, purchasing, inventory systems, budget management, and catering software. Excellent communication, coaching, and staff development skills are essential.

Who are we hiring?

The Premium F&B Operations Catering Manager is accountable for the overall event-related catering program management of the Premium F&B outlets and Catering events, as well as Team Catering for our sports teams. He/she ensures an exceptional guest experience by driving performance of supervisors and front-line team. The manager collaborates across functions to achieve business results and reacts as needed within a fast paced and dynamic environment. Success in this role is demonstrated by an exceptional customer experience, a commitment to the engagement and development of team, and achievement of business results. The Manager, Premium F&B Operations reports to the Director, Premium F&B Operations.

What will you do?

  • Sets direction for supervisory team and front-line catering staff to ensure consistency of guest experience and all F&B products in premium catering outlets and catering events; oversees complete event-related operations of designated areas including supervision of non-F&B event-related staff.
  • Tracks sales trends and recommends adjustments to maximize catering departmental profitability and keep F&B offerings current; proactively identifies and implements solutions to departmental challenges; responds to service breakdowns immediately.
  • Coordinates daily labor activities: ensures proper staffing levels are in place, assigns scheduled employees and manages breaks to foster a seamless delivery of service.
  • Maintains physical inventory of food, beverage and disposable products and implements systems to mitigate waste and monitor costs; inputs inventory counts and reviews with Finance on a monthly basis.
  • Accountability, maintenance and organization of Catering storage spaces – both beverage and smallwares.
  • Works directly with clients and sports teams from the initial inquiry phase to the physical run of show for each event.
  • Collaborates with Culinary Department to execute food and culinary initiatives.
  • Completes and submits payroll accurately and according to Company-specified guidelines and deadlines.
  • Partners on the full-cycle recruitment, hiring and development of supervisors and front-line staff by conducting interviews, selecting candidates for hire, onboarding, providing continuous feedback and identifying on-going training and development opportunities in an effort to leverage talent, when applicable to Catering.
  • Conducts periodic meetings with supervisors and team leads covering Department of Health (DOH) guidelines, cleanliness initiatives, service and product changes and Company-wide communications.
  • Maintains a high level of integrity and role models a positive attitude and adherence to all Company objectives and goals; ensures that all team members are engaged, upbeat, and delivering an exceptional guest experience.

  • Provide exceptional experiences for our guests, partners, and team members, including by adhering to our appearance and presentation guidelines while on-site.

    • What do you need to succeed?

  • The ideal candidate will have a minimum of 5-7 years of Food & Beverage management experience, to include oversight of fine dining and catering within an entertainment venue or hotel.
  • Proficiency in Point of Sale (POS), purchasing and inventory systems.
  • Experience managing budgets and resource allocations.
  • Proficiency in catering software: Caterease, Triple Seat, Delphi, or similar programs.
  • Successful track record measuring customer satisfaction and loyalty and recommending/ tracking improvements.
  • Ability to manage cross-functional teams and to build collaborative relationships that motivate and encourage performance even without direct reporting relationship.
  • Excellent communication skills and ability to engage with all levels in the organization in a variety of settings and group sizes.
  • Adept at maintaining a positive, open, approachable, and professional relationship with a diverse group.
  • Demonstrated experience coaching, mentoring and developing staff and ability to monitor performance and to hold team accountable for outcomes.
  • Proactive self-starter with proven ability to manage multiple tasks while under tight deadlines.
  • Comfortable employing sound business judgement to manage conflict and resolve guest concerns with a sense of urgency.
  • Proficiency in Microsoft Office.
  • Previous experience within Sports & Entertainment, theater operations, Custodial/Housekeeping or event planning is preferred.
  • Experience managing union staff preferred.

  • Lifting 25 lbs., standing for long periods and walking long distances.
  • Ability to work a flexible schedule including nights, weekends, holiday and split days off; willing to travel to other venues as needed.
